This commit updates the configuration for ScyllaDB documentation so that:
- 6.2 is the latest version.
- 6.2 is removed from the list of unstable versions.
It must be merged when ScyllaDB 6.2 is released.
In addition, this commit uncomments the redirections that should be applied
when version 6.2 is the latest stable version (which will happen when this commit
is merged).
No backport is required.

This pull request adds dynamic substitutions for the following variables:
* `.. |CURRENT_VERSION| replace:: {current_version}`
* `.. |UBUNTU_SCYLLADB_LIST| replace:: scylla-{current_version}.list`

As a result, it is no longer needed to update the "Installation on Linux" page manually after every new release.

file to make branch-5.2 the latest version and
remove it from the list of unstable versions.
As a result, the docs for version 5.2 will become
the default for users accessing the ScyllaDB Open Source
documentation.
This commit should be merged as soon as version 5.2

This commit adds branch-5.2 to the list of branches
for which we want to build the docs. As a result,
version 5.2 will be added to the version selector.
NOTE: Version 5.2 will be marked as unstable and
an appropriate message will be shown to the user.
After 5.2 is released, branch-5.2 needs to be
moved from UNSTABLE_VERSIONS to LATEST_VERSION
(where is should replace branch-5.1)
