This commit replaces the 6.0-to-6.1 upgrade guide with the 6.1-to-6.2 upgrade guide. The new guide is a template that covers the basic procedure. If any 6.2-specific updates are required, they will have to be added along with development. Closes scylladb/scylladb#20178
